Earth Hour Special Raw Tapas Menu at Grassroot Pantry

Earth Hour has been celebrated in Hong Kong since 2009. With over 2.8 million residents and 4120 companies/schools giving support in 2014, it is fast gaining traction in our city.

 

Peggy Chan, the chef and proprietor of Hong Kong’s two leading organic and wholesome food restaurants, Grassroots Pantry and Prune, will once again be turning off the lights for Earth Hour, 28 March 2015 in support of a sustainable Hong Kong.

 

With Priscilla Soligo, the renowned chocolate maker and owner of Rawthentic Food, as guest chef, the pair has once again teamed up to create a 6-course menu with the additional option of paired Cold Pressed Juices, Elixirs and Organic Cocktails, all to be enjoyed completely in the dark.

 

Theming the evening TAPAS NIGHT, the kitchen team will also be working by candlelight, preparing the entire menu raw. Starting with a table-shared Savoury Tapas of Dehydrated Cheesy Kale Chips, sprouted buckwheat and sunflower seeds, a “Trail Mix” of Spirulina and sweet spices, and a Circular garlic bread “toast” with fermented cashew cheese, pomodorini and basil, the menu moves onto individual plates for each person, in a Raw and Pickled Garden Vegetable Salad with Cashew Ranch, Olive dust, and “Edible Green Moss”.

 

Carrot Red Bell Pepper Bisque with Herbed Pignoli White Truffle Cream

 

Both chefs have created dishes for the menu, alternating between courses, and also working with a variety of culinary influences. Priscilla’s second course of Raw Bisque of Red Bell Peppers with Herbed Pignoli White Truffle Cream is followed by Peggy’s Coconut Rice Rolls, filled with springtime organic greens, avocado, fresh herbs and lime, before a bowl of Crispy Marinated Mushroom “Glass Noodle” Lo Mein.

 

Courses five and six are both SWEET TAPAS, starting with a Raw Passion fruit mousse, with Baobob Gel, Coconut Whip, Brownie and Crumble. The menu finishes with a Chaga Mushroom Almond Milk Chai Dessert Shot, topped with grated chocolate from Priscilla’s new business venture, Raiz The Bar Local Chocolate Makers.

The menu will be available in two sittings, from 6pm to 8-30pm, and 830pm to 10-30pm, and will cost $ 680 per person exclusive of service charge.
